About Theerawat Phonophochai, Our Executive Head Chef

Thai Head ChefTheerawat was born on the 5th of May 1964 into the northeastern province of E Saan. He learnt many of his culinary skills at a young age and joined the most famous restaurant in his locality. At the age of 12 he was already the chefs assistant, working alongside him at all times. Theerawat learnt to cook from his parents who had a joy and passion for creating food. The families cooking skills were well admired by locals.

Theerawat’s skills have flourished in his 38 years as a Thai chef. He has cooked professionally in many countries, including Switzerland, Germany, France and America. He has now been a chef in the UK for 12 years.

Thai food profile

Theerawat’s thoughts on cooking Thai food…

“There are certain rules that govern Thai cuisine. In savoury dishes we salt our food with fish sauce, making it the primary source of sweetness. For sweetness we always use palm sugar rather then granulated or brown.Thai salad dressing has no oil and many of the salads do not contain any sugar. You may find an exception to this, such as papaya salad, but none of our salads at lemongrass use oil.”

Lemongrass is proud to introduce E Saan’s food culture into the UK. E Saan food and it’s preparation has been handed down from generation to generation in Thailand. The E Saan people use their own freshly grown plants, fruits and local produce to make their cooking a much purer and more organic style of cuisine.

Theerawat’s views on E Saan-style cooking…

I am very proud of Lemongrass because they follow the traditional style of Thai food; using fresh ingredients for the best taste. It makes me feel as if I’m home in Thailand!
